Weekend time is family time. Spending time with spouse and kids is always a rejuvenating experience. However, all the fun that you were supposed to have with your family is spoiled when you hear the ringing doorbell and then find out that your friends have come.
Now that they have come to your house, you will have to be a great host and prepare something delicious for them. But, you must be thinking as to what great can be cooked in such a short period of time.
This has happened to me on a number of occasions and the same thoughts have crossed my mind.
Initially, I could only make basic dishes, which were good, but then, I’ve come across a few grilled recipes that can also be cooked within minutes.
Therefore, I thought maybe I should share a few of those recipes with you so that you can also prepare yourself for last minute guests.
Chili Lime Chicken Kebabs
If you are expecting guests at dinner, then this recipe can satisfy their hunger. Let’s delve into the details of the recipe.
- 1 lb skinless (boneless chicken breast, cut into 1 ½-inch pieces.)
- Salt and freshly ground pepper.
- Cayenne pepper.
- ½ tsp garlic powder.
- ½ tsp onion powder.
- ½ tsp paprika.
- 1 tsp chili powder.
- 1 lime (juiced.)
- 1 ½ tbsps. (red wine vinegar.)
- 3 tbsps. (olive oil.)
- Add lime juice, vinegar and olive oil in a small bowl and whisk all the ingredients together.
- Season with garlic powder, salt, black pepper, cayenne pepper, onion powder, paprika, and chili powder.
- Place the chicken in a baking dish along with the sauce and stir to coat.
- Cover the baking dish and marinate the chicken for at least 15 minutes.
- Preheat your ceramic grill for medium to high heat followed by threading chicken on the skewers.
- Brush some oil on the grill grate and place the skewers on the grate for 10-15 minutes or until the chicken turns dark golden.

Spicy Grilled Shrimp
This recipe can also be prepared in quick time, and I can assure you that this recipe will grab everybody’s attention. Let us now discuss how to prepare this recipe
- 2 lbs large shrimp (peeled and deveined.)
- 2 tsps. (lemon juice.)
- 2 tbsps. (olive oil.)
- 1 tsp paprika.
- ½ tsp cayenne pepper.
- 1 tbsp. (coarse salt.)
- 1 large clove garlic.
- 8 lemon wedges
- Preheat your ceramic grill to medium heat.
- Take a small bowl and crush garlic cloves with salt.
- Now, add paprika and cayenne pepper into the bowl followed by adding lemon juice and olive oil to form a paste.
- Take a large bowl and toss shrimp with garlic paste. Make sure that the paste evenly coats the shrimp pieces.
- Brush the grill grate with oil, then place the shrimp on the grate for 2-3 minutes per side or until the shrimp become
- Transfer the shrimp to a serving dish and garnish with lemon wedges.

Grilled Skirt Steak With Homemade BBQ Marinade
If you are not interested in using bottled sauces and marinades, then you can make a homemade BBQ marinade of your own. It will be full of flavors and won’t contain MSG.
- 2 lbs skirt steaks (trimmed.)
- 2 garlic cloves (mashed.)
- 1 tbsp. (fish sauce.)
- 1 tbsp. (chili paste.)
- 1 ½ tbsps.. (soy sauce.)
- 2 tbsps. (rice vinegar.)
- 2 tbsps. (brown sugar.)
- ½ orange (juiced.)
- Preheat your ceramic grill to medium heat and then, lightly oil the grate.
- Take a large bowl and add garlic, fish sauce, chili paste, soy sauce, rice vinegar, brown sugar and orange juice in it. Whisk all the ingredients followed by adding skirt steak into the mixture.
- Marinate skirt steak for 15 minutes.
- Now, place the skirt steak on the preheated grill around 4 minutes each side or until the steak turns brown in color with center becoming slightly pink. If you have a smoker thermometer, then you can insert it into the center of the steak in order to check the reading. It should read 140 degrees Fahrenheit or 60 degrees Celsius.
