Thank you so much to Divine Magazine for hosting me today. Christmas is right around the corner and I can’t help but think what traditions Ryan and his four girls might have. He’d definitely be up late making sure all the gifts are wrapped and the stockings full. And in the last couple of years, teenager Mel would have started helping him, making sure the younger girls still believe in Santa and have lots of joy.

The girls would all want to help with cookie-making and they’d each have their favorite, which of course Ryan would make. He works very hard to make sure they all know that they are loved.

Speaking of cookies. I make a bunch of different kinds every Christmas to hand out to friends and family. One of my favorites is coconut bonbons – it’s simple but delicious.


8 oz cream cheese, at room temperature

4-5 cups icing sugar

1 tsp vanilla

sweetened shredded coconut

food colouring (optional)



Beat cream cheese until fluffy

Add icing sugar a cup at a time until it holds its shape when rolled.

Add food colouring if desired (if you want more than one colour, divide the cheese/icing mix and colour each portion

Form into small balls less than 1 inch in diameter and roll in the coconut until coated.

Store in an air tight container in the refrigerator.

These are little sugar bombs with the tang of the cream cheese and the texture and flavour from the coconut and they are delicious!
